Boxrec's Records: Prizefighter.

Why are these not always in the order of the fights. For example, on Dean Francis's record - it looks like he won his last fight... when he got KO'd in the first vs Keeton.

because the bouts are only sorted by date, we don't have a field for time as well

Certainly bout order would be a good field to have.

Yes it would. Sadly I don't think that's reported with results very often.
