I think Jason Cook was a late replacement when he beat Casamonica for the Euro title, about a weeks notice.

Steve Cruz v Barry McGuigan, i remember Cruz replaced someone, but can't remember how much notice he got.

Jeff Harding v Dennis Andries as well , Dennis was supposed to of faced Don Lalonde

Doing a little research on this , i may have a winner.

Isidro garcia, fought Jose Lopez for the WBO flyweight title he won via UD , Alejandro Montiel was originally scheduled to fight Lopez for the vacant crown, but withdrew a few hours before the fight. Garcia happened to be in attendance as a spectator and was asked to step in while sitting at ringside eating a doughnut.
Garcia fought and won the title using borrowed trunks, protective cup and mouthpiece.

Cornelius Boza Edwards our WBC Jr Light champ from the 80's had a late replacement opponent, Rolando Navarette, who stepped in for Bazooka Limon. Navarette caused a huge upset by blasting out Boza in a 5 round shocker.

Calzaghe was Collins' mandatory, he pulled out after collapsing in the gym and retired. Eubank was in training to fight Mark Prince at light heavy on the same undercard, I believe and took the fight at 11 (?) days notice and shed the extra lbs to make 168.

I think the CAT fight came about because it was an easy fight to make, the WBO loved Eubank and not having to make 168 or 175 suited him. I don't remember him being in training to fight anyone specific when it was made but am prepared to be corrected.

Eubank vs Thompson wasn't a late notice jobby.

I do, he was sat there supping a few beers when the original opponent pulled out for some reason,and they basically offered him the fight,and he took it.

Colin McCauley was in the venue when Miguel Matthews didn't show against JonJo Irwin; he got his kit on and went the distance (I think) though they were gym mates.

It's one of those things that has gained mythical status. He was in the audience but it was already arranged that he was on standby. Apparently he was sucking down a beer and munching on a pretzel but no doubt they would have played that down given that he was fighting for a title. The WBO refused to sanction it, wisely.

No I think you're spot on, I must have been getting confused between the Calzaghe and Thompson situations.
