I only recall seeing a guy named Jimmy Vincent once, it was televised on ShoBox here in America. It's been so long I don't remember the name of the opponent, but I do remember thinking he won the fight so this may well be the one I saw.

It was a good fight, Barnes was fairly well touted in U.K.

Tony Booth had more wins than any current fighter, and fought for the British title at the time he was a “journeyman “. He also was a natural light middle but would take jobs up to Heavy.

Mike Weaver called himself a journeyman in a few early interviews
He definitely fits the bill

Someone mentioned Sugar Gibiliru earlier, he won the British Super Feather title, the title had a weird introduction back after a 20 year break with a string of champions losing it on their first defense, some journeymen type boxers did win the title in upsets.

Neil Haddock 10-9-1 beating Neil Armstrong

Anthony Hanna earned himself a shot at the British title, Howard Clarke got himself a world title shot!

Went 5-6 before putting sone wins together and even dropped losses to the likes of Ajisafe after.

Last match, arguably should have won a world title.
