And Roy is younger than Johnson but only by a few months

Other end of the scale but William Warburton has done it a few times.

His Mano Lee one probably the biggest.
Good bit of hype about Lee in South Wales.
Warburton got up for it and beat him twice.

The 2 that spring to mind for me is

Benn v McClennan.
Benn written off as having no chance

Alex Arthur v Michael Gomez
Although to be fair, Gomez was a class although inconsistent fighter so not sure how much of an underdog he actually was

Another 2 of my favourite fights absolutely loved Gomez demolishing the overhyped big headed twat Arthur.

38 Year old Javier Castillejo knocking out 27 year old, heavy favourite Felix Sturm with a thunderous punch has got to be near the top of the list.
He was well behind on points in the 10th round as well.

Had never seen this before. Such a vicious left hook followed by 3 vicious left uppercuts and then a left hook to the body. And a perfectly timed intervention by the ref.

I'm perfectly aware of that. And I'll simply state what I've already said - Jones was coming off a KO defeat to Tarver and he was not at that point regarded by anyone as either an up and comer or even p4p . He was in the 15th year of his career as a pro and it was 11 years after he'd first won a world title by beating Hopkins. He doesn't meet any of the criteria specified by the OP. Not sure what about that isn't clear.

I don't think Benn was considered past it,he was the reigning WBC champ,the reason he was written off is because of McClellans crazy punching power.

Jim was the pre-fight favourite because most of O'Grady's 75 wins came in his native Oklahoma and were handpicked by Pat O'Grady, his father, manager and promoter. Don't get me wrong, O'Grady could fight but you had to be somebody special to beat southpaw Watt in his own Glasgow and the Scot boxed O'Grady's ears off for much of the fight, which people tend to forget. The champion was ahead on all three cards at the finish.

Mike Weaver's stunning two-round win over Carl "The Truth" Williams falls well into this category. Williams had just given Larry Holmes 15 rounds of hell for the world heavyweight title while Weaver, an ex-champion, was only there as a stepping stone. The muscled ex-marine failed to read the script.
