Amatuer Boxing - weight making?

Yup, second Q on this board, hope we got experienced guys viewing this.
At my 'walking weight' I float between 52kg and 57kg, usually I hang around 54-55 whilst I'm training. I'm hoping to compete soon enough, and my coach recommended I go -54kg based on my height and build. What I'm struggling with is trying to keep my weight at that.
I do alot of running, 2-5 miles 3 times a week, a 15-20 minute hill run once, and train 3 times a week at boxing.
My diet at the moment consists of bread, eggs, potato and pasta - mainly to maintain energy levels - and partially because I can barely cook, and I'm living alone.
Any advice? I'm pretty lost with weight making/dietry and training.
