Omlettes

Right. I've recently got into omlettes as a fairly clean small meal.
Normally, I have a 3 egg omlette (with yolk) with hickory smocked turkey and sweet peppers, failing that, chicken and mushroom. If i'm feeling crazy, I'll cook it with a bit of sesame oil and soy sauce.
a) Best way to fry an omlette?? Mine seem pretty good, but i'm sure I can improve them.
b) Best additions to your omlettes? What is the king of omlettes?

Get a proper omlette pan.
When you put the mixture in the hot pan - mix them like you scrambling them for about 15-15 seconds and let the mixture settle, then put in the filling and fold it just leaving the inside slightly runny.
Chorizo is good with a Spanish omlette (potato and onion fried in olive oil).

Mine's with capers, chopped young spinach and olives. I might also add some sardines on top, after its ready!

Spicy sausage, a couple of different cheeses (grated), a few dashes of Olive oil and maybe a few chopped/sliced Turkish Cayenne peppers.
Or the more traditional British Ham and cheese. Depends how brave and hungry I am, really.

Lol, I know. Salmon and hot pepper sauce sounds great. I usually just drink liquid egg whites straight from the carton so I'm not really in any position to be judging others.

You do know eggs are also available in shells, don't you?? Some might say they're even preferable ;)

haha it's all about the easy in the US of A. Breaking shells is hard work
Standard ham and cheese one for me - there is always too much egg in the pan so I use a spatula to draw in one side and let some more liquid fill it, repeating this until all done. Then just fold it in half and it's done really. Got to have some runny left in it or it's a rubbery frisbee, no good

Lean minced beef, onions, tomatoes, chilli powder, cumin, coriander, salt, pepper. If you don't like chilli omelettes then you're on idiot.
