My personal favorite rivalries that I've had the pleasure of seeing.
1. Rafael Marquez vs Israel Vazquez
2. Marco Antonio Barrera vs Erik Morales
3. Arturo Gatti vs Micky Ward
4. Manny Pacquiao vs Juan Manuel Marquez
5. Evander Holyfield vs Riddick Bowe
6. Muhammad Ali vs Joe Frazier
7. Jose Luis Castillo vs Diego Corrales (I was gutted when the 3rd fight was cancelled)
Those are the only ones that spring to mind right now.

I tend not to listen to any of the pre-fight theatrics, but when there's such an intense rivalry I'll often the dialogue between the two fighters intriguing.
I loved it that Manny and Marquez had a karaoke contest and both claimed victory, almost a bitterly as in their ring efforts.
