There may be a very short answer to this, but are new gloves used for each fight in the pro game or are the same pair used over and over, and is there any advantage (comfort or flexibility) in using a worn in pair compared to a new pair or vice versa?

I think the padding can flatten down and it could spell doom for opponents.

Hence you'd often see boxers hitting the wall in the changing room, breaking up the padding and moulding it to their fists.

Depends on Commission & its location. In most case used gloves can be used over & over again in prelims providing they're in good condition. Title fights usually require new (combatants have the right to particular Brand) & some do hammer shite out of them against change room wall, so they have a better grip of them.
From time to time, there's Brand disputes but that's because sponsors dollars/pounds is in the mix

They can only be used once per show.

Under the BBBofC, it's rule 3.24 (see http://www.bbbofc.com/content/rules-boxing-0), which says:

3.24 Gloves will only be used in one Contest at a Promotion. Contestants must wear the same make of glove. It shall be for the Promoter to ensure an adequate supply of approved gloves is available for every Contest.

Reason why they are not reused is for the reason given by G0mez above.

I remember years ago going to goodison oark sports center to watch a friend of mine fight and they wer sharing gloves it was one if the late tommy miller shows

Must cost promoters a fortune on small shows, and what happens to them afterwards? In Amateur national tournaments the same gloves are worn by multiple fighters each day.

Not at the same time.

Be a terrible waste if the gloves worn by Audley Harrison against David Haye and those worn by Johnny Nelson against Carlos Deleon weren't re-used.

And also the hygiene/cross contamination issues that bodily fluids can cause.

Aye mate was the last time I fought, I used to resent the fact I was told what type of gloves I HAD to wear, when I wasn't getting any money to advertise their gloves, but I suppose the costs need to be covered....
