Probability this match happen next year is very low, but, nobody knows. Who would win, and how ?

Jacobs would likely win... He's too big, tall, and strong, and a good boxer and puncher. I think Brook needs some action at 154 first, but he could beat a lot of top Middleweights. Besides GGG and Jacobs, I think Eubank knocks Brook out and Canelo and Saunders fights would be close. He beats the rest.
