Not necessarily the "best" fight you've seen, can be a more domestic level if you think. Open criteria, quality, drama, action etc. Purely subjective, no right or wrong picks
Heavy - Whyte vs Chisora
Cruiser - Toney vs Jirov
Light Heavy - burton vs buglioni
Super Middle - Froch vs Groves 1, benn vs Mclennan
Middle - Hagler vs Hearns, Eubank vs Benn
Light Middle - macklin vs Moore, Rhodes vs moore
Welter - Hearns vs Leonard, Gatti vs Ward, cotto vs Margarito
Light Welter - Pryor vs Arguello, Khan vs Maidana
Lightweight - corrales vs Castillo
Super feather - Barrera vs Morales 3
Feather - Hamed vs Kelley, Sanchez vs Gomez
Super Bantam - Barrera vs Morales 1
Anything lower I don't really follow. I may come back to this to update. These were the initial fights that came to my head

Cruiserweight, if we talking domestic fighters , pick one of Carl Thompsons thrillers , probably the loss to the late Ezra Sellers (RIP) , but Rothmann, Haye, Dunstan and Eubank x 2 were all great fights too!

Any level really it depends what you like.
Thompson was in good fights you're right. I was tempted to put Haye vs mormeck which was good but it wasn't quite entertaining enough to be listed with the others which are classics.
Holyfield vs qawi was pretty fun too

Couple of fights I liked but not sure if they make the list
Welter - cotto vs Margarito. Great fight but the whole hand wraps thing...
Feather - Sanchez vs Gomez. Sanchez was a beast but this fight was just 1 guy battering the other real quick, Hearns vs hagler Hearns was live and going right at marvin
