It could happen and tbh I'd rather see Canelo stopping GGG than a controversial decision/close fight or a robbery.

I'll be very surprised if Canelo stops GGG with head shots - we know he has a great chin and Canelo wasn't able to stop a number of smaller, less durable fighters. I've mentioned before, though, that Canelo is an excellent body puncher and GGG looks far less comfortable taking punches to the body than to the head. I think working the body has to be an important part of Canelo's fight plan and if he were to get a stoppage, I'd expect it to come from a body shot.

It could be a combination of GGG slowing down due of his age and Canelo going to the body. Canelo is a very good combination puncher.

It certainly can happen. Why not?
Canelo can punch and punch hard. Puts short, fast combos together. Accurate.
Gigi fans routinely say that he has a granite chin. But what is that based on? Has he fought a host of legendary punchers?
Is it because he absorbed the shots of Ishida, Adama, Monroe and Wade? Punching legends.
Maybe Gigi just had an average chin. Not bad, not great.
If small Kell Brook can mark him and shake him, Canelo can certainly dent him.
But I expect Golivkin to jab jab jab all night and try deperately to avoid the danger zone. So he might survive 12.
But to me, it will never be a surprise if the Mexican star puts away Gigi within the distance.

Stevens, Lemieux, Jacobs and probably even Rubio punch harder than Canelo.

It is possible. Pretty much anything is possible in this fight. I would only be surprised by GingerHead by KTFO in the first 25% of the fight, although even that is possible.
GingerHead needs to make 3G fight backing up and on the ropes as much as possible, he needs to attack the body early and relentlessly, he needs to tie 3G up and attempt to sap his strength. Most importantly, GingerHead must get 3G's respect early and show better stamina than we have ever seen of him.

Lemuiex isn't a legendary puncher but he does hit pretty hard. Stevens isn't a light hitter either. Canelo isn't a legendary puncher neither and probably doesn't hit as hard. I recall Mosley saying Mayweather and Canelo's power were similar.

If I was Canelo I'd pretty much solely focus on the body.

Lemieux, Jacobs, and Stevens can all hit. The idea that you can only prove your chin against elite punchers is stupid anyway, and most guys are hurt at least once before 38-0 and P4P rankings. Floyd, Spence, Degale, Ward, Kovalev, AJ, Lara, Wilder, Jack, Canelo, Cotto, Thurman, Easter, Brook, Stevenson, Roman (before Saturday night), Trout, and loads of top fighters have been hurt by less than amazing punchers; GGG hasn't clearly been hurt at all going by the footage and fight reports out there.
The very promising David Benavidez also got dropped on Friday, and Mikey Garcia has been down before too. Beterbiev, Gvodzyk, etc.....the list goes on. None of this means that GGG can't be stopped, but it would be a case of it happening to a clearly durable guy.
