Based on Greb's reputation. You'd have to assume Greb outworks and outlands Lamotta.
Greb is basically always described as being everything Lamotta was and much more.

Fabulous match. I'm leaning towards Greb based on his reputation for speed and volume.

I'd pick Greb for this interesting hypothetical.
LaMotta would be no walk in the park obviously.
Stylistically it's an amazing bout by default, being that they were relatively similar.
Both workhorse bull types who just kept charging forward and blasting and brawling away.
Greb takes it because his work rate would be just simply a slight bit too much for even The Raging Bull.
On a side note, Greb's "Not mentioned Much" overall "Full body elusiveness movement" would also be a decisive advantage versus LaMotta. Greb had that very awkward herky jerky full body movement which LaMotta simply didn't have.
Greb wins this one 8-5-2 in rounds in a 15 rounder.
LaMotta would probably have his best moments between rounds 4 to 10.
Those rounds they'd be essentially beating the crap out of one another.

To go along with all you mentioned, which is all pretty on the money. Lamotta also wasn't much of a puncher, an aggressive, mauling, brawler sure, but not a big puncher relatively speaking, and Greb with over 200 more fights than Lamotta had, was stopped less often than even the iron chinned Lamotta.
Greb would be outlanding him 2 to 1 in all likelihood. Greb would be faster, have better defense, be probably every bit as tough, and just all around trickier to deal with than the straight ahead brute that was Lamotta. A stoppage either way for either man is EXTREMELY unlikely, and would have to be due to some sorta freak injury, but to say the odds would be against it would be an understatement.
