De Carolis debuts among the professionals when he was twenty three years old, in November 2007, versus the Slovak Marian Tomcany, a little value opponent. The Italian boxer adjusts Tomcany with a 2nd round TKO. After other five wins in as many matches, one won by TKO, always in the 2nd round, the others ended to the scorecards, on June 14, 2008, De Carolis tries to assault the IBF youth middleweight title, challenging the Ukrainian champion Max Bursak, nicknamed the Tiger; fighter with a strong record of 14 victories, including 4 wins before the limit, 1 draw and no losses. De Carolis lost by TKO in the 8th round, never able to trouble the opponent, which, however, in 2013, would become European middleweight champion. Despite the first defeat in his career, in the same year, De Carolis returns three more times in the ring, the last of which, on December 23, with a win to the scorecards on the Belgian Michael Recloux, nicknamed El Gladiator, wins the middleweight International title of the minor federation WBF. In 2009, after a victory versus journeyman Mugurel Sebe, De Carolis has the opportunity to challenge the Italian middleweight champion, Gaetano Nespro. The bout, very balanced, ending with a win by split decision in favor of the defending champion. In fact, while the judges Antonello Paolucci and Remigio Ruggeri assign the match to Nespro respectively for three and two points, judge Salvatore Galasso sees the victory of De Carolis for two points: 94-96.

In the same year, after the defeat suffered by Nespro, Giovanni De Carolis move on supermiddleweights, winning to the scorecards versus Hungarian Sandor Ramocsa. In the new weight class, on January 30 2010, De Carolis challenges the Danish, of Congolese origins, Lolenga Mock, niknamed Lumumba Boy, for the vacant European (EBU-EU) title. Mock was already EBU-EU European champion in 2006 and 2008. Also, in 2004, had been champion EBA (European Boxing Association) and, above all, could claim a KO against David Haye, nicknamed The Hayemaker, future light heavyweight and heavyweight world champion, having landed him in 2003, during the 2nd round, in a bout which, however, saw Mock defeated by TKO in the 4th. The match was held in Aarhus, Denmark, under the sign of a great balance. Mock was able to prevail, in fact, with a closer majority decision: judges Erkki Meronen and Jean-Francois Toupin assigned the victory to the Danish, respectively, for two (113-115) and one point (114-115), the judge Beat Hausammann gave a verdict of parity (114-114).

Also in 2010, after the defeat with Mock, and a further bout in the supermiddleweights with the Hungarian journeyman Balint Bizco, won by knockout in the 2nd round, De Carolis comeback to middleweights to challenge the Italian champion Matteo Signani, nicknamed the Jaguar. The match, held at the Palace of Sports in Cesena, saw the victory to scorecards of Signani, with a unanimous verdict, and the knockdown of De Carolis in the 6th round.

== Again in the supermiddleweights ==

After this new defeat, De Carolis, in 2011, back in the supermiddleweights category, winning for the second time against Sandor Ramocsa, in May, and against another Hungarian, Titusz Szabo, by TKO in the 2nd round, in December. This last bout, in particular, serves as preparation for the challenge of January 2012 versus the Spanish Blas Miguel Martinez, nicknamed El Colorin, valid for the WBC Mediterranean Champion. The Italian boxer conquers the belt with a convincing KO in the 3rd round. This bout is followed by two more matches: the first is an easy win, by knockout in the 1st round, against the Hungarian journeyman Jozsef Molnar, while the second is a much more challenging bout versus the twenty years old Attila Baran, already light heavyweight Slovak champion and WBF supermiddleweight Intercontinental Champion. However, even in this case, De Carolis is the author of a convincing victory by TKO in the 8th round. In September, De Carolis challenges the Ukrainian, naturalized Polish, Roman Shkarupa, nicknamed the Lion Heart, already Poland champion and champion of the minor federation TWBA. The bout, which is valid for the vacant WBC International title, is very balanced, and resolves with a win by split decision in favor of De Carolis, to which two judges, Vazquez Francisco Marcos and Massimo Barrovecchio assign the victory, respectively for three (115-112) and a point (114-113), while the judge Sergio Silvi sees the victory of the Ukrainian for one point (113-114). After the conquest of this new title, De Carolis returns to fight in 2013, taking home two easy victories by knockout against two journeymans boxers: Zoltan Kiss Jr and Artem Solomko . The two victories, added to the positive results achieved continuously since 2011, open the way for the challenge to Arthur Abraham, nicknamed King Arthur, the Armenian boxer, naturalized German, holder of the WBO Intercontinental Title, former IBF middleweight champion, from 2005 to 2009, supermiddleweight WBO European champion in 2012, and supermiddleweight WBO world champion 2012-2013, title won, and then lost in the rematch, against Robert Stieglitz. The bout is held in November 2013 in Germany and, despite De Carolis showed high-level technical skills, especially in the first part of the match, the challenge is resolved with a clear victory to the scorecards for the defending champion: two judges Mihai Leu and Noel Monnet and Andreas Stenberg, assign 12 (120-108) points in favor of Abraham, while the judge Andreas Stenberg gives 10 (119-109) points of advantage to the German.

After losing to Arthur Abraham (moreover, returned supermiddleweight champion a few months later), Giovanni De Carolis returns to the ring in March 2014, versus Croatian Ivan Stupalo, young boxer with already three defeats in eight matches, winning by TKO in the 4th round.
During the same year, exactly on 1th November, the Italian boxer has, once again, the opportunity to fight for a title, the vacant IBF Intercontinental Title, already belonged to boxers as Robert Stieglitz and Adonis Stevenson. The opponent is the Serbian Geard Ajetovic, boxer of all respect that, as an amateur, can boast the participation at the Sydney 2000 Olympics, as a welterweight; a silver medal at the World Junior Championships and a gold medal at the Europe Junior Championships and, as a professional, the WBC light heavyweight title of the Mediterranean, the supermiddleweight WBO European title, alwais in the supermiddleweight, the International IBF title, but, above all, two respectables defeats, to the scorecards, against two boxers who both would then became world champions: Daniel Geale and Dmitry Pirog, and a third defeat, always to the scorecards, versus the future European champion Matthew Macklin. Moreover two victories, in as many matches, in MMA, where fights as a welterweight. The bout takes place at Pala Olgiata in Rome and sees De Carolis, who lands Ajetovic in the first round, winning the crown with a unanimous verdict, after a hard battle, which highlighted the bravery and techniques of both boxers.

De Carolis defends the new title on May 2, 2015, against an other Italian, of Senegalese origin, Mouhamed Ali Ndiaye, former IBF Youth champion and Mediterranean IBF champion, in 2006, International champion, always IBF, in 2007, and EBU-EU champion in 2011, title won by TKO at the 12th round against Andrea Di Luisa. Despite the respectable curriculum, De Carolis clearly dominates Ndiaye, winning by unanimous decision, sending him to the canvas in the first round and, more in general, hoverhanging him both from medium and long distance, both from the short distance.

After a good and hard bout, at the Pala Olgiata in Rome, Giovanni De Carolis conquests the Super middleweight IBF Intercontinental title, winning by a unanimous decision versus the Serbian Geard Ajetovic.
The fight starts well for the Italian boxer wich, yet in the first round, knocks out the Slav with a beautiful left hook. However, Ajetovic does not seem to particularly suffer the knockdown and, after having withstood the onslaught of the Roman in the second round, goes on the offensive in the third and fourth, bringing De Carolis to fight on short distance and set a very closed defense from which he often comes out, always landing power punches for the knockout. In particular, just in the fourth round, hitting De Carolis with a lovely short uppercut. Along the lines of the short distance continuing the fifth and the sixth round, with the two boxers which, after brief periods of rest, let reciprocally themselves go to dangerous offensive outbursts. Although in the sign of a substantial equilibrium, De Carolis seems, however, more effective, being able to take advantage of his great technical knowledge that, supported by good preparation, allows him to bring a greater number of punches than the opponent by performing complete figures, like in training, and making himself dangerous with insidious uppercut to the liver. Nevertheless, the reactions of Ajetovic, though stylistically less elegant, are always dangerous and far from sporadic. Specifically, the sixth round, although not the most spectacular, was crucial, in our opinion, since De Carolis has found the tactics key of the short distance and began to send out of measure Ajetovic thanks to fast rights landed in step out, not decisive power punches, but destabilizing at the tactical level, as they have called into question for the Serbs, the ground on which he felt safer. The seventh and eighth rounds continue with Ajetovic that hits with a nice set of punches to the face and De Carolis, which responds with straights and uppercuts to the body. The ninth round was another crucial one, with Ajetovic who began to take the initiative, still hitting De Carolis, up to become overconfident, beginning, at the end of the round, to drop his guard . But, exactly at this topic moment that, psychologically, could brings the inertia of the bout on the side of the Serbian, De Carolis has reacted immediately, punishing his opponent with a stunning right straight, which make him more careful. In the last three rounds, the Italian boxer did what, theoretically, many insiders expected from the beginning, that was fighting on the medium and long distance, taking advantage of his greater reach, to bring home the result, without too much trouble.
