De Carolis debuts among the professionals when he was twenty three years old, in November 2007, versus the Slovak Marian Tomcany, a little value opponent. The Italian boxer adjusts Tomcany with a 2nd round TKO. After other five wins in as many matches, one won by TKO, always in the 2nd round, the others ended to the scorecards, on June 14, 2008, De Carolis tries to assault the IBF youth middleweight title, challenging the Ukrainian champion Max Bursak, nicknamed the Tiger; fighter with a strong record of 14 victories, including 4 wins before the limit, 1 draw and no losses. In the same year, after the defeat suffered by Nespro, Giovanni De Carolis move on supermiddleweights, winning to the scorecards versus Hungarian Sandor Ramocsa. In the new weight class, on January 30 2010, De Carolis challenges the Danish, of Congolese origins, Lolenga Mock, niknamed Lumumba Boy, for the vacant European (EBU-EU) title. Mock was already EBU-EU European champion in 2006 and 2008. Also, in 2004, had been champion EBA (European Boxing Association) and, above all, could claim a KO against David Haye, nicknamed The Hayemaker, future light heavyweight and heavyweight world champion, having landed him in 2003, during the 2nd round, in a bout which, however, saw Mock defeated by TKO in the 4th. Also in 2010, after the defeat with Mock, and a further bout in the supermiddleweights with the Hungarian journeyman Balint Bizco, won by knockout in the 2nd round, De Carolis comeback to middleweights to challenge the Italian champion Matteo Signani, nicknamed the Jaguar. The match, held at the Palace of Sports in Cesena, saw the victory to scorecards of Signani, with a unanimous verdict, and the knockdown of De Carolis in the 6th round.

After this new defeat, De Carolis, in 2011, back in the supermiddleweights category, winning for the second time against Sandor Ramocsa, in May, and against another Hungarian, Titusz Szabo, by TKO in the 2nd round, in December. This last bout, in particular, serves as preparation for the challenge of January 2012 versus the Spanish Blas Miguel Martinez, nicknamed El Colorin, valid for the WBC Mediterranean Champion. The Italian boxer conquers the belt with a convincing KO in the 3rd round. This bout is followed by two more matches: the first is an easy win, by knockout in the 1st round, against the Hungarian journeyman Jozsef Molnar, while the second is a much more challenging bout versus the twenty years old Attila Baran, already light heavyweight Slovak champion and WBF supermiddleweight Intercontinental Champion. However, even in this case, De Carolis is the author of a convincing victory by TKO in the 8th round. After the conquest of this new title, De Carolis returns to fight in 2013, taking home two easy victories by knockout against two journeymans boxers: Zoltan Kiss Jr and Artem Solomko . The two victories, added to the positive results achieved continuously since 2011, open the way for the challenge to Arthur Abraham, nicknamed King Arthur, the Armenian boxer, naturalized German, holder of the WBO Intercontinental Title, former IBF middleweight champion, from 2005 to 2009, supermiddleweight WBO European champion in 2012, and supermiddleweight WBO world champion 2012-2013, title won, and then lost in the rematch, against Robert Stieglitz. Moreover two victories, in as many matches, in MMA, where fights as a welterweight. The bout takes place at Pala Olgiata in Rome and sees De Carolis, who lands Ajetovic in the first round, winning the crown with a unanimous verdict, after a hard battle, which highlighted the bravery and techniques of both boxers.
