I dont know why we should associate chippys with the Midlands and the North. You get a choice, Haddock or Cod and thats that. In the South you get far more variety. They also do Skate, Plaice and my favourite Rock Salmon. Well thats how it was when I lived in London. When I came to the Midlands, years ago now, I went into a chippy and asked for Rock and chips. The girl laughed and asked me what sort of a rock did I want. I have one of the top fish and chip shops in the land right on my doorstep. It does everything. Scampi, Sea Bass, Hake, Haddock, Cod, Haddock, Rock Salmon, you name it. You can have it either deep fried in batter, in tempura, grilled or steamed. On Norwood Road mate, called Olley's, just as you come up from Herne Hill station.
It's a little pricey, though to be honest, not much more than any decent chippy, and the fish is cooked to perfection. They cook it all fresh to order, so none of that nuked fish which is greasy as fook, and dried up inside like an old spinster's poonany.

So London Chippys are still the best. When I was a kid they wrapped the fish and chips in newspaper which seemed to add to the taste. When we didnt have any money we could get a bag of scratchings for free.
