Walter Edgerton (Kentucky Rosebud) vs John Henry Johnson. 1916-06-09. Philadelphia.
Edgerton billed as 61 (possibly 63), Johnson billed as 56, combined age 117 or more!

November 17, 2000: Larry Holmes, age 51, beat Mike Weaver, age 49, by TKO in round 6. Combined ages = 100 years. I think it may be the oldest where the ages can be actually confirmed, although Edgerton v. Johnson may be correct if only the ages could be confirmed.

He also gave Bonecrusher a rematch right around that time. I watched them both on my PPV box. Sadly I actually paid for Holmes/Butterbean.
