The number of big men coming from most Asian and Latin American countries is going to be small, and therefore it will be difficult to find a very talented fighter among them. Massively populated countries like India and China are sure to have a fair number of big men simply because the population is so large, but these places have virtually no involvement in professional boxing.
The biggest Asian fighter (excluding fighters from countries like Kazakhstan and Uzbekistan,) that I've seen compete at a high level in pro boxing was SMW world champ Chong-Pal Park of South Korea.
Yes, however, consumption of red meat in the diet has been proven to increase physical size. The Japanese are already experiencing a growth spurt as they switch to a western diet. Such assertions are not as ridiculous as they seem. The chinese diet will change radically in the next couple of decades as they move into the cities.
Back in 1920's england, men of 6 foot were considered to be big in their time. Jim Jeffries was considered a beast of a man at 6' 2" at the turn of the century. He would have dwarfed most men of his own time.
