What is the minimum legal age that you can professionally box in Australia because I always thought it was 18 in Australia but then I came across this kid?

I don't know what the minimum age is now, Rose and Famechon both started fighting professionally at 16. I think it depends on the minimum age of when you can go to work. I saw the record of Tony Pappa who started fighting at 16 in the 1990s.

Minimum age in Oz is 18.
