Diet - Low GI / Paleo - Anyone do it?

Currently I eat pretty low GI (avoidance of any white carbs e.g rice, pasta, and no breads or dairy)
Most of my carbs come from beans, pulses etc and keeps me pretty healthy - couple of 2 mile jogs and some light weights a few times a week with no lack of energy.
I'm looking to get into boxing properly and wondering if anyone sticks to a diet like this or does the volume of training demand that simple carbs be eaten?
Any advice is much appreciated

I stick to a reasonably similar diet. However I have to have my oats in the morning. A low carb breakfast leaves me feeling sluggish all day. That said, post breakfast I eat brown rice or sweet potato for lunch 3 times a week. The rest of my food is vegetables, meat, fish and tofu. I exercise a reasonable amount. 3 x weights sessions (with 30mins of cardio afterwards), 2 x HIIT sessions and 1 x distance run (10k+) per week and feel fine doing it. I would have imagine I'd have to up that though if I wanted to get into boxing properly.

I don't think there's anything wrong with eating complex carbs, particularly for lunch, if you are not trying to lose weight.

It depends what is your goal, whether you're trying to change anything in terms of body composition or not. If it's just energy levels you're after, then I guess it's good to experiment a bit as everybody may react slightly different to different diets.
Myself, even though I'm training hard (often twice a day) I'm eating pretty much strict Paleo (grain-free). I'm having an 'extra 50% calories' day once a week, when I will have gluten free complex carbs in every meal. I feel great when eating like this, not lacking energy at all and if I'm 100% strict and supplement properly (HCL, HMB, L-carnitine and a few more) I can go down to about 6% body fat.

I think for now my goals are just to get into relative fitness. I'm 5'10 - weight is about 190 pounds so I've a bit of excess that could be shifted but not a concern yet.
Templeslave - how important is that 50% extra day? I've seen other people mention that when on paleo it can be beneficial to have a day where you 'load-up' so to speak or eat some high-gi carbs but never quite understood what the reasoning for that would be.

What's the deal with L-carnitine? I had a bit of a poke around on google a while back and struggled to come up with anything concrete on the benefits.

Never high GI - those you should pretty much only have immediately after workout - within 10 mins.
As for the extra 50% cal day, it's in order to maintain/increase muscle mass and can even be done twice a week, say Wed and Sun, best on non-training days. You want to maintain glycogen level in the muscles but because people have different metabolic rates and different tolerance to carbs, doing it just full-on once or twice a week is much less likely to make you put on body fat. Of course you still have to experiment a bit in order to work out what quantities and what kinds of carbs work best for you.
