I haven't seen some of these older fights having been bitten by the boxing bug in 2002, but the most boring fight I've seen is Chris Byrd vs Davarryl Williamson. Horrendously boring.
Juan Manuel Marquez vs Derrick Gainer was a real stinker also, made worse by the fact that it seemed like a good match on paper going in.
Quite a few other boring fights in my time as a fight fan, but these two always immediately spring to my mind first.

Klitschko v Ibragimov for me, a truly horrible fight.
Shannon Briggs vs Jameel McCline was a total stinker too. A couple of guys so intimidated by each other that they just couldn't engage. It was actually sad.

Audley v Danny was pretty bad but I did last it all the way through.
There are plenty that I have had to stop watching so they would have to take the biscuit. I was so bored bored with them at the time that I don't care to remember them now or I will go back to that place

Not most boring ever but Hopkins-Dawson, Eastman & Calzaghe were boring as hell. Sure there's a few more Hopkins fights I could include as well....

Victor Galindez defending his light-heavyweight title against Eddie Gregory nee Mustafa Muhammad. It was so boring that the TV announcers (CBS) were complaining about it and when Victor dropped Eddie for a two count they said it didn't seem important.
