I beat a future undisputed heavyweight champion of the world in my very first fight.

Are you thinking of John Carlo?

Yep. That's a pretty impressive debut. He also went out with Natalie Cole for a while, which has nothing to do with this thread but would be good for a pub quiz.

Yeah Bey had a pretty good run in his first 10 or so fights before losing to Holmes. He beat Greg Page as well. Two pretty solid wins for a guy that would go on to end up with a 18-11-1 record.

A harder one (I think)

My debut opponent weighed 13st 6lb.
In my very last fight my opponent weighed 13st 6lb
They two opponents were related.
I fought them over 8 years apart.
I lost to both of them.

That was an easy one as it has been asked before on a few other web sites.

My first pro opponent weighed in at 188 lbs... ...exactly the same as my last opponent 8½ years later.
Who am I?
Dick Richardson lost to Jim Cooper in his 1st fight and lost to Jim's brother Henry Cooper in his last fight 8½ years later.

Here's another one that is worded a little differently:

I started and ended my career against two brothers.

I never fought for a world title - but I met 7 men who did.
My last opponent was the brother of my first opponent.
Who am I?
Dick Richardson, lost to Jim Cooper in his 1st bout and Henry Cooper in his last.

What former World Contender said, "to see a white man really worrying about me changed my whole life."

I know this is a little hard, as a lot of quotes are, so I will give you another one while your thinking about it.

In which fight did one of the fighters wore a singlet with his name on his back?
Hint: The fight took place in the last 50 years.

Hint: You can find the answer to the singlet question on BoxRec, that's why I asked it!

Yes and No!

It was Don Fullmer who wore the singlet and he actually took it off between the 4th and 5th rounds, But he still lost.

On the question, What former World Contender said, "to see a white man really worrying about me changed my whole life."

It was after Jackson, way after!

A new one.

I won over 100 fights and stopped almost half of them.
I never got a world title shot
I was only stopped twice, one of them in my very last fight, the other at the start of my career by retirement.
I managed to draw with an ATG

I hold the record for title defenses in my division.
I only was a champion in that division.
I beat every man I faced as a pro.
I never was stopped.

Myung-Woo Yuh
Correct.
I had to figure out a way to differentiate him from Finito, and I'd have said "I never was dropped," except I'm not certain Yuh never was.
