Are 12 round fights ever non-title fights?.

Out of all boxers that turn Pro, how many get to fight for titles?.

Generally are debut professional fights 4 or 6 rounds, does anyone ever go in at 8 rounds?.

Yes
A small percent
And yeah usually 4 however it's not a rule that all stick to. I know Lomachenko debuted in a 10 rounder, think Inoue was 8 and some Thais begin with 10 and 12 rounders (I.e Denkaosan Kaovichit)

Almost always a 12 round fight is for some "title.'' Sometimes the "title' is something like North American Federation or Pan European, or something. I haven't seen a 12 round fight where they didn't call it some title, but it may have happened.

As someone wrote, depends what you call a title. Even with the inflation of the word "title," I'd still say it's a small percentage.

8 rounds or more is rare for a pro debut but it has happened. 4 is the norm, sometimes 6.

Not all, just some. Usually because they have a lot of Muay Thai experience. Similar to good amateurs starting in 6/8. The experience they have usually makes the 4 rounders a bit pointless.

Could also be a case that a lot of Thais don't actually have full records so it may be difficult to confirm if it really was their debut.
