How would that fight play out? Could Parker defeat Wilder?

There is a huge height and reach disparity between the two. Not to mention power and experience.
Parker would really be up against it. He does not have the head movement or footwork to avoid the windmill effect. While his chin is good, no one's is that good. The stories about the two of them sparring are just sparring stories and don't really mean anything IMO.
I'd like to say something like- if Parker gained more experience at the top level he would be in with a chance, but a few more fights at the top level could easily take his belt away and then he would be of no interest to Wilder.

Most likely yes, especially with fair referees and no unfair advantages for Wilder.

Wilder favourite, he has more advantages, but if Parker can box smart enough he should be written off. I just think he’s a bit too defensively open for me to pick him in this one

It's a pretty unfavorable match-up for Parker, IMO. His power is only an asset when he can deliver it to its destination, which he wouldn't have an easy time doing against a fast, tall fighter like Wilder. Takam is slick enough to block a lot of the punches that tall dudes throw. Parker isn't like that.

I'd lean toward Wilder but Parker would be the best opponent Wilder has faced to date (I seem to be saying that about quite a few fighters) so I wouldn't write him off. As has been said, he does have a good chin but he is much shorter and would get hit. Anybody getting in the way of that right hand on a regular basis is going to be struggling. Parker has good hand-speed and could succeed in getting inside and pressuring Wilder from close range.

What you'd need to beat Wilder is the elusiveness of a Fury (even that might not be nearly enough) or the ability to outbox him and take him out before he has the chance to unload his bombs. Joshua might be capable of that but I have serious doubts whether Parker is.
