I'd have to pick Greb. Is he overrated,and Fitzsimmons is underrated..?
Greb may be slightly overrated,and Fitzsimmons may be more than slightly underrated.
Still I'd favor Greb. It would be a grueling battle for him though.
Greb would win a 7-5-3 decision. Fitz would knock Greb down,in rounds 2 and 5.
Greb would just get more determined. I think that he was just simply That Type.
I don't see Greb decking Fitz,but I Do see Greb fighting with relentless ferocity in the last several rounds to earn the win.

Greb's resume definitely speaks more than Fitz' one.

Now THIS is a truly legendary caliber fight where neither man is going to give an inch and at their absolute best seldom ever got dropped let alone stopped, in a time when fighters fought every day of the week practically or at least once a month.
Can Greb, who only understood pressure, be able to withstand 15 rounds of body blows and skull cracking right hands from a man who despite his 167 pound frame possessed super heavyweight punching power from all his years of being a blacksmith?
Can Fitzsimmons score enough of those blockbuster punches to keep a human perpetual motion machine off of him, to score enough points to win rounds?
Fitzsimmons fought a few men similar to Greb, and Greb fought a few men similar to Fitzsimmons. For "Ruby Red" it was Jim Jeffries who was of the swarming, non-stop punching style. Fitzsimmons was winning those matches until he got knocked out by the much bigger and stronger man.
Greb clearly has the better resume of wins, although in reality Fitzsimmons is not that far away in quality wins. Both men achieved greatness at higher weights, although it was Fitzsimmons that won world championships in different weight classes. Greb is probably the most consistent fighter of all time, and Fitzsimmons didn't really start to lose all that much until he got into his 40s and 50s.
This is really a pick'em fight. Fitzsimmons literally killed people with his punches. There is a famous legal case known as "The People vs Bob Fitzsimmons," in which a judge ruled that deaths taking place in the ring are purely accidental because Fitzsimmons was brought in for murder.
Greb was robbed many times with draws and losses he shouldn't have gotten; despite what the record books say he won more than one time against Gene Tunney. Not too bad for a man who trained on whiskey and whores.
Either Fitzsimmons gets him out of there in 10-12 rounds, or Greb just edges it in a very brutal contest with neither man having any let up. Fitzsimmons could be out fought or out boxed--- but very few people were able to accomplish it. Same with Greb, he had to basically be half-blind before he started losing fights and even then that seldom happened.

It would be a war and Greb would edge Fitz 2-1 or 3-2 in a series. Greb would put the Windmill on Fitz on the body and head to take a decision, but if Fitz focus to pound Greb on the body like Tunney did in 3 or 4 rematches against Greb, Fitz may have a chance to win a decision himself.
