Coetzee was more skilled and polished. Quarry's toughness could become a problem, but Coetzee would be more likely to win, dec or late TKO.

Quarry would put up the fight with counters and body punches, but Coetzee would jab him more and scored with big right hands to either take a decision or the cut-eye late round stoppage.

Quarry was light-years ahead in boxing skill. Coetzee "big, strong & awkward" (see his highlights on Youtube).

Quarry would make Coetzee look bad -- missing wildly and getting clocked with his chin up in the air.

Just look at Quarry's fights with Foster and Lyle. I believe that he would've handled Coetzee. At his best, he was an accurate counterpuncher who was tough as can be. That being said, Coetzee could be dangerous with devastating right hand power. In some of his fights, he showed pretty good mobility. In other fights, Coetzee looked ponderous and lumbering.

If they fought a series I would probably lean towards the South African but in a one-off shootout I will go with Quarry. Jerry at his best was really durable and really tough and threw punches in bunches, and could really dig down deep to get what needed to be done. And he did it against a better era of heavyweights.
