Jones would batter Vito with greater speed and hands accuracy to stop him on the eye cut in 6 rounds. What do you guys think and who do you got?

Roy wins big, for sure. The only question is how long can Vito sustain the action. Antuofermo was super-durable, had the stamina of an ox, and knew lots of mauling and clinching techniques. So we could be in for a surprise here.
My guess:
40% chance Vito goes the distance or gets stopped on cuts sometime after the tenth round.
60% chance Roy wins on TKO (cuts) anytime before the tenth
That's the most I can narrow down my prediction. There's just no telling how Vito's eyes hold up.
