When Sullivan Barrera broke Joe Smith Jr's jaw in the third round and Joe went on to finish the remaining 7 rounds against the hard puncher.

Carl Thompson v Rothmann, I thought was gone but he kept coming back and then that shot. Loved that fight, Rothmann was an excellent sport after and was happy for Thompson. Remember that on BBC. Used to love early noughties BBC boxing.
Possibly a weird choice but I also thought Naz was quite courageous in his fight vs Barrrera, he knew he was losing and took a beating like a man.

Potter showed a lot of balls too. He was late replacement as far as I remember so knew he wasn’t fit for a long fight but gave it everything.

Arthur Abraham v Edison Miranda.
His jaw was an absolute mess by the end of the fight. Many fighters would have quit, never mind squeeze out a decision.

Tyrell Biggs fighting with a broken right collarbone from the 2nd round. Crude but massive punching Jeff Simms (check out his fight with Earnie Shavers, classic) was on a run of 10 wins (8 kos) when he took on the undefeated Olympian.
Biggs boxed 8 rounds just with his left hand and dominated with his jab and fast feet. Biggs always had heart, he also showed heart in his David Bey fight and for the whole Tyson fight.

Isaac Chamberlain years ago fought with a dislocated shoulder years ago vs Wadi Camacho and still won.

Ayers v Rigby 1, you wouldn't have held it against either had that fight ended earlier and both knew when to stop.
Jorge Castro against John David Jackson. He was maybe 1 or 2 punches away from being stopped and in huge trouble.

anyone remember the fight in the usa where both guys battered each other so much it was a mutual dr stoppage? trying to remember the names, i think it was 2 black dudes in the 90s, or maybe late 80s
