Louis was smarter, faster with his hands and more solid technically.
Foreman was a bigger puncher and a better chinned fighter.
Louis wasn't a pure slickster though and he had chin issues. Those factors I'd call defining in this case. Louis could keep Foreman at bay for some time, but he wouldn't be able to avoid punishment. He wouldn't be able to outfight Foreman either.
Foreman by KO in about 10 rounds.

Louis had chin issues, but he survived knockdowns against Braddock, Two Ton Tony and Buddy Baer just to name a a few as Louis came back to win by KO.
Foreman survived knockdowns from Ron Lyle and Jimmy Young with the exception of Ali.
Louis would make Foreman work behind his jabs and powerful punches while Foreman would gas himself out and Louis would KO Foreman in 10 rounds.

Louis would have not fought Foreman like Lyle did. Maybe Foreman would have won, but it would have just been a toe to toe brawl.
