One does not usually associate the word "brutality" with amateur matches,
but surely there must have been some of the years.
What were the most "Brutal " (Amateur) Boxing matches-Ever ?

Hard to say refs usually jump in before too much bloodshed.
Speaking from experience, in the seventies with no headgear, ten ounce gloves , it seemed like there was more damage.
I fought a guy named Dan Morgan in the gloves in 78, I don’t know if it’s the same guy who had a good pro career or not, but I do know he hit me with a left hook in the first round and I saw stars the rest of the fight. I mean double vision, white lights the whole deal. I won the decision but I’m sure I was concussed.
Had to fight two nights later. Lost.

Leon Spinks lost them 2 front teeth in the Amateurs didn't he? Isn't that the story?

No, I had read where the family was poor in St. Louis so he had to go to
the Public Health Service dentist for poor low income people,
and he(the dentist there) recommended that Leon have his front teeth extracted
( I don't think the reason was ever given to Leon as to why they needed extraction,
possibly because of severe coffee stains on them or something)
and i'm not even joking

My mistake. Carry on.

I've seen some carnage, like Arturo getting vs joe Hutchinson. Gatti got cut above the eye and it folded over his eye.
Arthur Abraham, broken jaw dangling!
Norman vs Holyfield was brutal, as was Forman vs Lyle
