Holyfield would stop Louis. Holyfield was faster, Louis was opened enough for him and had chin issues. Holyfield had a great counter-punching abilities, while Schmeling had his major success with preparing counters, Holyfield could perform no worse.

Louis with chin issues is a myth. You were thinking about his first fight with Max Schemling, who exposed his weakness by dropping his left after jabbing and got KO in 12. Guess what happens in the rematch? Louis KO Schmeling in 1 to avenge his earlier loss. You didn't watched Louis when he survived a knockdown against Jim Braddock and came back to KO him in 8 to win his World Heavyweight Title. You didn't watched Louis survived a knockdown against "Two Ton" Tony Galento as Louis came back to KO "Two Ton" in 4. You didn't watched Louis survived a knockdown against Buddy Baer in their first fight and Louis came back to batter Baer to retain his title. 12 Rounds is not enough, but in 15 rounds is better in the classic era of boxing.
Louis would adapt Holyfield's counter-punching and not to do the same mistake as those fights I mentioned by jabbing in his face to wear Holyfield down on the outside before knocking him out in 14 rounds after nailing him with heavy punches. If it was a series, then Louis may take 2-1 over Holyfield.

I'd love to see Holyfield with six ounce gloves on. Holyfield would knock out Louis, around the mid rounds. His speed, skill and power are the deciding factors for me.

Defense is clearly better for Evander.
Heart is bigger for Holyfield. He had the best heart ever, I'd say.
Stamina is quite even. Holyfield suffered stamina problems only in his Moorer and Bowe #3 fights. In the Moorer case he was injured, in the Bowe case he was coming after suffering hepatitis.
You also forgot speed, where Holyfield was clearly superior.
Plus Holyfield's superior counterpunching and workrate would benefit for him.

I've seen the Baer, Braddock, Schmeling 2, Billy Conn, Marciano and Walcott fights.
