- Took up fencing at age 13 and won the Amsterdam championship and the Netherlands junior championship.
- Made her professional kickboxing debut in 1982. Rijker compiled an undefeated record — some sources say 36-0 (25 knockouts) and others say 37-0-1 (25 knockouts) — and won four world titles.
- Fought an exhibition match against a man in 1994. Muay Thai boxer Somchai Jaidee, who had a record 13-1 (9 knockouts), knocked out Rijker in the second round.
- Made her professional boxing debut in 1996. She compiled a record of 17-0 (14 knockouts) and won the WIBF and WIBO world junior welterweight titles.
- Acted in the Oscar-winning boxing movie Million Dollar Baby. She has also appeared in the movies Rollerball and Star Trek, as well as the TV shows Jag and The L Word.
